CHAPTER SEVEN

Cooper invited the McCade's to stay the night at the ranch, but they had hotel reservations in Lubbock for the night. They did agree to stay for dinner, which sent Mandy scrambling for something to fix other than the hamburgers she'd planned to serve. She stood in front of the freezer, trying to figure out what she could thaw out and cook in time.

"You're studying the contents of that freezer like it holds the secrets of the universe."

Mandy spun around. "Blake. You scared me half to death."

"Sorry. Didn't mean to startle you. Need some help?"

"Not unless you can figure out what I should fix for dinner." Mandy turned back to the freezer.

Blake scooted her aside and pulled out several packages. He shook his head and set them aside. After digging through the packages of meats and vegetables, he took out a half-dozen tri tips. "Here. I can cook these out on the grill. You can bake a bunch of potatoes, boil up some corn on the cob, warm up some rolls, and voila! Dinner."

"But those are frozen. They'll never get done in time."

"Sure they will."

At Mandy's skeptical look, he said, "I've done it lots of times."

Mandy cocked an eyebrow.

"In Wyoming, we cooked out a lot. Since I was the youngest, I usually got the job of doing the grilling. Tri tips were a favorite, and almost always frozen when I started." He gave her that goofy grin he got when he was trying to talk her into something--usually his bed. "Trust me."

Mandy checked the potato bin. There were plenty that were large enough to bake. She found a large package of corn in the freezer. She could make the rolls while the potatoes baked, and also whip up something for dessert. "Okay, you're on."

They worked side by side, Mandy washing potatoes and wrapping them in foil. Blake pulled several spices from the drawer by the stove and made up a rub using paprika, salt, pepper, garlic, and turmeric. Mandy watched, making note of what he used and how much. Once he'd coated the meat with the spices, he put it on a tray and set it in the refrigerator.

"I thought you were going to cook those?" Mandy said. She put the potatoes in the oven and turned the temperature as high as it would go.

"I only need about thirty minutes to cook them. I'll let them sit until it's time to put them on."

"You're the expert." She sure hoped he knew what he was doing. She'd never actually fixed a tri tip before. Cooper had bought them on impulse the previous week.

"Trust me," he repeated. "I'm going to go outside with the guys for a while. Will you come out when you get everything ready?"

"Sure. You go on. There's extra beer in the pantry if y'all need it."

Once he'd left, Mandy pulled out the ingredients to make the rolls. Fortunately, she had an easy, quick recipe from her grandmother that tasted as good as any she'd ever eaten, but took half the time to make.
